Sushi Saint to open its second Orlando location at ICON Park this spring.
Culinary excellence is coming to the heart of Orlando’s Entertainment District.
Sushi Saint, the popular downtown Orlando hand roll sushi concept from Michelin-starred chef Michael Collantes, will open at ICON Park, its second location in the Orlando area. Expected to open this spring, the 3,000-square-foot restaurant will feature indoor and outdoor seating for 150 guests and create 30 new jobs.
“This is about responding to locals and visitors who are looking for culinary excellence in the I-Drive and Universal Boulevard area, whether it be for lunch or dinner,” said CEO and president of ICON Park Chris Jaskiewicz. “Just as Orlando is becoming known as a foodie destination, ICON Park has been upping its own culinary game, and we’re proud that Chef Collantes selected ICON Park for his second location.”
Chef Collantes earned his first Michelin star in 2022, a year after launching Soseki Modern Omakase in Orlando, FL. Sushi Saint earned a spot on the Michelin Guide's recommended list in February 2024 and was honored as a Bib Gourmand recipient in April 2024.
Chef Collantes and his team pride themselves on delivering the freshest sushi experience, and the new Sushi Saint at ICON Park will offer many of the same high-quality, innovative rolls, dishes and cocktails diners have grown to love at the original location, including the temaki bar which allows the skilled chefs to craft hand rolls right in front of guest, ensuring each bite is enjoyed at its peak freshness. The menu will also feature dishes exclusive to the new restaurant.
His current restaurant portfolio includes Soseki Modern Omakase, Sushi Saint, a Temaki Bar located in Downtown Orlando’s Creative Village, Bar Kada, a sake bar adjacent to Soseki, Perlas Pizza, Chez Les Copains, and Taglish.
Sushi Saint joins a lineup of more than 20 restaurants and bars at ICON Park, including Brother Jimmy’s BBQ, The Winery and Tasting Room by Brewlando and Helena Modern Rivera from Atelier Dining Group.
