Ceiba introduces Myths + Gods, a New Cocktail Program inspired by Ancient Mexican Mythology

Ceiba, the signature rooftop Mexican restaurant and bar at Conrad Orlando at Evermore, is bringing ancient Mexican mythology to the modern cocktail experience with the introduction of Myths + Gods. Featuring 13 new cocktails inspired by mythological deities and legends, the program combines Mexican spirits, traditional ingredients and innovative culinary techniques to create a beverage experience rooted in storytelling and cultural discovery.

The concept takes inspiration from the sacred Ceiba tree, the restaurant's namesake, which symbolizes the connection between the underworld, earthly realm and heavens in Maya mythology. Each cocktail draws on a mythological figure, translating its symbolism into distinctive flavors, ingredients and presentations that celebrate Mexico’s cultural heritage.

Home to a collection of more than 300 premium agave spirits and known for its international bar takeover programming, Ceiba has established a beverage identity centered on Mexican spirits and craftsmanship. Myths + Gods builds on that foundation, following months of collaboration between Conrad Orlando's director of food and beverage, Josh Murray; Hilton Americas beverage specialist, Miguel Sanchez Borrego; and Ceiba’s beverage and culinary teams.

"With Myths + Gods, we set out to create a beverage program that would challenge the conventional approach to cocktail development and offer guests something genuinely distinctive," said Murray. "Our team brought an incredible amount of thought, expertise and creativity to this program, and that ambition is something we want to be known for. Orlando's culinary scene continues to evolve, and we’re excited to be part of shaping its future.”

Ancient Legends, Modern Mixology

Among the program's featured creations is Ixchel, "The Moon," inspired by the Maya goddess associated with the moon, healing and renewal. The cocktail combines Lost Explorer Mezcal and Mijenta Reposado washed with purple corn and huitlacoche, a prized Mexican ingredient sometimes called the "Mexican truffle." The result is an earthy complexity and natural crimson hue reminiscent of a blood moon.

Coatlicue, "The Creation," pays homage to the Aztec mother goddess associated with the earth and fertility. Combining Patrón tequila, charred pineapple and herbal notes with cotija coconut foam and dried chorizo dust, the cocktail balances tropical and savory flavors in an unexpected expression of Mexican cuisine.

Other highlights include Quetzalcoatl, "Feathered Serpent," a carbonated combination of mezcal, raicilla, kumquat, clarified green apple and fresh cilantro; andTonatiuh, "Fire," featuring mezcal washed with house-made mole, sotol and vermouth, served alongside an Oaxaca cheese ball. Rounding out the selections is Ah Puch, "Sacrifice," which pairs brown butter and cocoa nib-washed rum with house-made rum cake syrup and a Cognac-soaked rum cake topped with brown butter frosting.

Where the Kitchen Meets the Bar

Central to Myths + Gods is a close collaboration between Ceiba’s culinary and beverage teams. Led by Chef David Montelongo, the kitchen plays an integral role in cocktail development, incorporating shared ingredients, house-made infusions and savory elements that blur the line between food and beverage.

Guided by the philosophy that cocktails are "born in the kitchen and brought to life at the bar," the team incorporates culinary techniques such as ingredient washes and specialty preparations to create layered flavors that complement Ceiba’s Mexican-inspired cuisine.

More than a beverage menu, each cocktail is conceived as an immersive narrative experience that extends beyond the glass.Developed in collaboration with 3D Vault, a partner specializing in menu and bar design, the program features specialty glassware and a custom-designed menu that introduce guests to the mythology behind each creation. From the vessels to the ingredients, every ingredient is intended to reflect the character and symbolism of the cocktail it accompanies.

With Myths + Gods, Ceiba continues to expand its exploration of Mexican spirits, flavors and traditions, offering guests a new way to experience the country’s rich cultural heritage through contemporary mixology.
