The diverse culinary team at Waldorf Astoria Orlando and Signia by Hilton Orlando Bonnet Creek are celebrating Hispanic Heritage Month, highlighting the culture and the people of Orlando who are championing it.

Drawing inspiration from cherished Sunday family gatherings, to the nostalgic food and music of their childhoods, each of the chefs skillfully weaves distinct facets of their Hispanic heritage into the diverse dishes they create. Explore the inspiration behind each Chef's menu below.

Juan Jose Suarez – the Chef De Cuisine at Bull & Bear, has honed his culinary expertise since the age of two, when he began cooking with his grandmother. The revamped Bull & Bear menu will feature the Carabineros Shrimp Seafood Paella, a tribute to his family heritage and cherished Sunday paella traditions with his father, upon its finished renovation this fall.

Dannilo Zapatel Herrera – Executive Sous Chef for Signia Orlando Bonnet Creek, also developed his culinary passion at a young age. He enjoys infusing a Peruvian twist into his menus as a heartfelt tribute to his grandmother. One of his standout creations at Harvest is the renowned Salmon Bowl, featuring a tantalizing Aji Panca Marinade that blends Peruvian flavors with locally sourced produce.

Chef Jesus, the Restaurant Chef at Zeta, fondly reflects on his childhood with Arepas being a standout food. Among the culinary team, it’s common knowledge that Chef Jesus has a deep love for the dish – and he often prepares them as the “family meal” for the kitchen team. Serving Arepas holds significant meaning for him as it reconnects him with his roots and the cherished way he was raised.
