Michelin-starred Chef Michael Collantes brings Nomikai by Sushi Saint to Orlando's Icon Park

Nomikai by Sushi Saint is set to open late Summer 2026 at ICON Park on International Drive.

Chef Michael Collantes and his 86 Hospitality group, the team behind Michelin-starred Soseki Omakase, Perla's Pizza, and Bib Gourmand-awarded Sushi Saint, are bringing their most ambitious concept yet to the heart of Orlando's entertainment district. Nomikai by Sushi Saint opens late summer 2026 at Icon Park, 8371 International Drive, Suite 60, with a target opening date of July 20.

Nomikai is a Japanese word for a celebratory social gathering: the kind of night built around food, good drink, and the people across the table. That spirit is the foundation of everything the restaurant is.

The menu expands on Sushi Saint's acclaimed raw preparations like salmon aguachile, hamachi truffle potato, traditional sushi rolls and a large format omakase platter. Adding to the foundation of sushi are large plates meant for the table: koji-marinated dry-aged tomahawks, bone-in ribeye, whole branzino, miso king salmon, and lobster noodles. The bespoke cocktail program matches the creativity of the menu and will pull inspiration from Japanese ingredients. It's a menu designed for sharing, for celebrating, for staying a while.

The space is as intentional as the food. Collantes describes the interior as "Tokyo neo-cyberpunk": neon blues and purples, original artwork, dark and moody with a soundtrack of electronica, house, and lounge. Intimacy is the priority: approximately 60 seats, by design.

"Coming from 10- to 30-seat restaurants, this is my big restaurant," says Collantes. "But we still want intimacy. We want storytelling."

Nomikai by Sushi Saint is a locally rooted, chef-driven concept making a deliberate statement in Orlando's most-visited corridor. As Collantes puts it: "This is what the local guys are doing in the tourist space."
