Orlando’s cocktail culture is getting a global spotlight as Ceiba, the signature rooftop Mexican restaurant and bar atop Conrad Orlando at Evermore, expands its ongoing bar takeover series this fall and winter with one-of-a-kind cocktail experiences.


The exclusive series invites locals, visitors and guests to experience world-class mixology through collaborations with internationally-renowned bars, bartenders and top-tier spirit brands while celebrating Orlando’s own thriving cocktail community and shared love of the craft.


Curated by general manager and cocktail aficionado Rob Colomb, the series highlights Ceiba’s agave-forward bar program while also introducing guests to leading voices in other celebrated spirit categories such as whiskey, gin and vodka.

Since opening last year, Ceiba has emerged as a premier dining destination for authentic Mexican cuisine and an extraordinary agave-based cocktail program, featuring an extensive collection of more than 300 premium agaves. The bar showcases six different tasting experiences of Mexican spirits, including selections from ultra-premium brands, alongside comprehensive tastings like the Agave, featuring five different expressions: tequila, mezcal, raicilla, sotol, and bacanora. This foundation of exceptional spirits and expertise allows Ceiba to host some of the city’s most exciting cocktail collaborations both at home and beyond.

Friday, October 10 – Breast Cancer Awareness Night with Bar Brujas (Mexico City) featuring Casa Dragones:

Ceiba welcomes Bar Brujas to kick off Breast Cancer Awareness Month with an all-female bartending team takeover. Hosted by Casa Dragones, the evening will debut their newest release, giving guests the first taste alongside bespoke cocktails curated by Bianca “Pipa” Bertoli, one of Mexico’s most dynamic bar talents.


Tickets are $15 and include a signature cocktail, an exclusive Casa Dragones pour, and benefit the National Breast Cancer Foundation, Inc. (NBCF).


Tuesday, October 14 - Off-Site Collaboration with Sexy Fish (Miami) featuring Mijenta Tequila:

Ceiba takes its acclaimed cocktail program on the road to Miami’s iconic Sexy Fish for an exclusive evening in partnership with Mijenta. Guests will enjoy a bold, agave-driven menu blending Ceiba’s Mexican flair with Sexy Fish’s vibrant setting for a one-night-only takeover experience.


Friday, October 17 – Breast Cancer Awareness Night with Courtney Lane featuring ATIAN Rose Gin:

Ceiba welcomes acclaimed mixologist Courtney Lane for a special guest shift highlighting South Africa’s ATIAN Rose Gin. Guests can enjoy ultra-premium gin-based cocktails crafted by Lane, with $5 from each drink benefiting NBCF.


Friday, October 24 – Breast Cancer Awareness Night with Natasha Sofia, Global Advocacy Director, Mijenta Tequila:

Natasha Sofia, an acclaimed mixologist and respected tequila industry figure championing Mijenta’s commitment to sustainability, responsible practices, and female empowerment, brings her expertise to Ceiba for an exciting tequila-focused evening. $5 from each drink will be donated to NBCF.


Saturday, November 1 – Día De Los Muertos Celebration with Swizzle Rum Bar & Drinkery (Miami) featuring The Lost Explorer Mezcal:

A cultural celebration rooted in Mexican tradition honoring the Day of the Dead will feature guest bartenders from Miami’s Swizzle Rum Bar & Drinkery, recently named on the long list for North America’s 50 Best Bars in 2025. Guests will have the opportunity to vote for their favorite themed cocktail to be featured on the Ceiba menu throughout November. The evening will include tarot card readings, immersive décor, and live entertainment.


Wednesday, November 12 – Bar Crawl Extravaganza with Hendrick's and Milagro Tequila:

The bar crawl will be a passport-style event featuring three guest bar takeovers throughout Ceiba’s rooftop space. Guests will receive a stamp and each bar stop; and $5 per cocktail will be donated to BASE Camp Children's Cancer Foundation, as part of Conrad Orlando's annual November charitable initiative.


Wednesday, December 17 – Off-Site Ceiba Takeover at Swizzle Rum Bar & Drinkery with Rockey’s Liqueur:

For the final collaboration of the year, the Ceiba team will bring their cocktail program to Miami’s Swizzle Rum Bar & Drinkery to team up with managing partner Jesús Perez and Rockey’s Liqueur, as well as other premium brands, for an unforgettable evening of cocktail showmanship and skill.


Each event reflects Ceiba’s commitment to honoring Mexico’s rich spirits heritage while fostering collaboration across the industry. Through these thoughtfully curated takeovers both in Orlando and at partner venues nationwide, the series continues to position Ceiba as a leader in modern mixology and a destination for innovation in cocktail culture.
